Summer Pasta Salad: Meeting People Where They Are

One of my favorite dishes to make during the warmer months is this summer pasta salad. Made with pasta, fresh vegetables, hummus, and herbs, it is simple, refreshing, and versatile enough to serve as a side dish at a cookout or as a satisfying meal on its own.

I especially appreciate that it can easily accommodate gluten-free, vegetarian, and vegan guests without sacrificing flavor.

Over the years, I have learned that hospitality is more than setting a beautiful table or preparing a great meal.

At its best, hospitality begins with paying attention.

Who is coming?

What do they enjoy?

Are there dietary restrictions to consider?

How can I make sure everyone feels welcomed, included, and cared for?

Those questions often shape my menu long before guests arrive at my door.

This summer pasta salad has become one of the ways I do that. For my vegetarian and vegan friends, the combination of lentil pasta and hummus provides a filling source of protein. Because lentil pasta is naturally gluten-free, it also works well for guests who avoid gluten.

The ingredients are simple, but the thought behind them is intentional.

That truth reminds me of the way God cares for us, something I’ve been learning deeply in this season as I walk through what I describe more fully in Living in the Wilderness Season.

Scripture tells us that God knew us before we were born. He formed us, called us, and understands every detail of who we are. Because of that, our journeys will never look exactly the same.

What God is teaching me may be different from what He is teaching you.

The season I am walking through may not be the season you are experiencing.

The lessons, opportunities, and challenges He places before us are uniquely designed for the people He created us to become.

Just as a thoughtful host prepares for the specific needs of her guests, God meets each of us where we are.

He meets us in seasons of abundance and seasons of uncertainty.

In our prayer closets and in our everyday routines.

In moments of joy and in our darkest hours.

Most importantly, He knows exactly what we need.

There have been times in my life when I questioned the path God had me on because it looked different from someone else’s. It certainly looked different from the one I imagined for myself.

Looking back, I can see that His provision was never absent. It simply did not always look the way I expected.

God was nourishing me for the journey He had prepared for me.

The same is true for you.

When we trust His timing and His wisdom, we can rest knowing that the God who created us is also the God who sustains us.

This summer pasta salad may be a simple recipe, but it reminds me of a beautiful truth: care becomes meaningful when it is personal, and God cares for each of us in exactly that way.

Summer Pasta Salad Recipe

Ingredients

  • 1 box lentil pasta
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, quartered
  • 1/2 red onion, finely diced
  • 1 container hummus, flavor of your choice
  • Fresh herbs for garnish (such as parsley, basil, or dill)
  • Salt and pepper to taste

Instructions

  1. Cook the lentil pasta according to the package directions, adjusting the cooking time to your preferred texture.
  2. Drain the pasta and allow it to cool slightly.
  3. Dice the cucumber, bell pepper, tomatoes, and red onion.
  4. Add the vegetables to the cooked pasta and toss to combine.
  5. Add the hummus and stir until the pasta and vegetables are evenly coated.
  6. Transfer to a serving bowl and sprinkle with fresh herbs before serving.

Notes

  • This recipe is easy to customize based on what you have on hand. Add bell peppers, olives, or other vegetables.
  • For extra protein, you can add small pieces of salami or another cured meat. Cut them into bite-sized pieces similar in size to the vegetables so they mix evenly throughout the salad.
  • This salad can be served immediately or chilled before serving.
  • Feel free to substitute your favorite seasonal vegetables.
  • If the salad thickens after refrigeration, stir in a small splash of water or lemon juice before serving.
