Chorizo and Fig Tapas

These Chorizo and Fig Tapas combine savory sausage, sweet figs, aromatic spices, and a rich honey-wine sauce to create an irresistible small plate. Serve them as a fall appetizer, game-day bite, or part of a tapas-style spread with crusty bread and a glass of red wine.

The inspiration for this recipe came from Barcelona Wine Bar in Washington, D.C. As soon as I tasted its chorizo with sweet-and-sour figs, I ordered several more rounds—and another order to take home. The kitchen staff apparently appreciated my enthusiasm because they sent out a little extra.

Good free food will make me happy every time.

Our server paired the dish with a Cabernet Franc and Malbec blend that complemented the sweet figs and savory chorizo perfectly. Between that pairing and my general love of Malbec, visiting Argentina’s Mendoza wine region remains firmly on my travel wish list.

After that meal, I decided to create my own restaurant-inspired version at home.

What Are Tapas?

Tapas are Spanish small plates or snacks. Depending on the setting, they can be served before a larger meal or combined to create the entire meal.

It is one of my favorite ways to eat because no one has to commit to a single entrée. Instead, everyone gets to share several dishes and experience different flavors around the table.

This chorizo and fig recipe works particularly well as part of a tapas spread, but it is equally suited to a fall gathering or football watch party.

How Is This Recipe Different From the Restaurant Version?

Barcelona Wine Bar serves its chorizo with sweet-and-sour figs and a balsamic reduction. My version takes a slightly different approach.

I use honey to enhance the figs’ natural sweetness and simmer everything in beef stock and red wine. Cinnamon and cloves add warmth without turning the dish into a dessert, while the savory chorizo, onion, and garlic balance the sweetness.

I also used the fully cooked Argentinian-style chorizo available at my local grocery store. Different types of chorizo vary significantly in flavor, texture, and preparation, so make sure you choose a firm, fully cooked sausage that can be sliced into rounds.

Ingredients You’ll Need

Chorizo

Use a firm, fully cooked chorizo that can be sliced without crumbling. An Argentinian-style chorizo works well here. Avoid raw Mexican chorizo, which has a loose texture and behaves very differently when cooked.

Figs

The figs provide much of the dish’s sweetness and pair beautifully with the salty, savory sausage. Halving them creates more surface area to absorb the sauce.

Honey

Honey reinforces the natural sweetness of the figs and helps the cooking liquid reduce into a glossy sauce.

Red Wine and Beef Stock

You can make the sauce with beef stock alone or combine equal parts beef stock and red wine for greater depth. Choose a dry red wine that you would also enjoy drinking.

Cinnamon and Cloves

A cinnamon stick and a small amount of ground cloves give the sauce warmth and complexity. Because cloves are particularly strong, a little goes a long way.

How to Make Chorizo and Fig Tapas

Heat a small amount of olive oil in a saucepan or deep skillet over medium heat.

Add the onion and cook until it begins to soften and turn translucent. Stir in the minced garlic and cook just until fragrant, being careful not to let it burn.

Add the halved figs and cook for approximately five minutes, stirring gently as they begin to soften.

Add the sliced chorizo, salt, black pepper, ground cloves, and cinnamon stick. Cook for another 2–3 minutes to warm the chorizo and allow the spices to become fragrant.

Pour in the beef stock or the red wine and beef stock mixture, followed by the honey. Stir to combine, bring the liquid to a gentle boil, and then reduce the heat.

Simmer until the liquid has reduced into a thick, glossy sauce that coats the chorizo and figs. Remove the cinnamon stick before serving.

Tips for the Best Chorizo and Figs

  • Use fully cooked, firm chorizo—not loose, raw Mexican chorizo.
  • Slice the sausage evenly so every piece heats at approximately the same rate.
  • Keep the heat moderate after adding the honey to prevent the sauce from scorching.
  • Stir gently so the figs retain some of their shape.
  • Allow the sauce to reduce uncovered, but watch it closely as it thickens.
  • Remember that the sauce will continue to thicken slightly as it cools.
  • Taste before adding more salt because chorizo and beef stock may already be salty.

How to Serve Chorizo and Fig Tapas

Transfer the chorizo and figs to a shallow serving bowl and spoon the reduced sauce over the top. Serve with toothpicks or cocktail forks for an easy small bite.

You can also serve the dish with toasted baguette slices to catch the extra sauce. For a larger tapas spread, pair it with olives, roasted vegetables, Spanish cheeses, potatoes, or other shareable appetizers.

A dry red wine—particularly Malbec, Cabernet Franc, or a blend of the two—will complement the sweetness of the figs and the savory richness of the chorizo.

Ingredients

  • 4 garlic cloves minced

  • 7 oz. Figs halved

  • 12 oz. chorizo cut in quarter inch diagonal slices

  • ½ yellow onion quartered

  • 1 tsp. salt

  • ½ tsp. black pepper

  • ½ tsp. ground cloves

  • 1 cinnamon stick

  • ½ cup honey

  • 1 cup beef stock or ½ cup red wine and ½ cup beef stock

Directions

  • Heat a sauce pan on medium and add olive oil.
  • Add the onions and cook until just translucent and then add the minced garlic. Cook until fragrant.
  • Add the figs and cook for about 5 minutes.
  • Add in the chorizo and then blend in the seasonings cooking for 2-3 minutes before adding the beef stock and honey.
  • Bring the mixture to a boil and let simmer until you have a thick sweet sauce to accompany the chorizo and figs.

Notes

  • My local grocery store only had an Argentinian sausage that was fully cooked. However, if you have access to other chorizo, feel free to experiment with that!
  • Serving size will depend on how much you want to serve. If you serve this as an appetizer then you can spread it out versus if you serve it as a meal. 

Sweet, savory, and just a little unexpected, these Chorizo and Fig Tapas belong on the fall appetizer table.
